Ingredients:

Directions:

  1. Preheat oven to 325.
  2. In medium mixing bowl, use mixing spoon or electric mixer to mix bananas, melted butter or margarine, orange juice, and sugar.
  3. Using whisk or rubber spatula, carefully fold in stiffly beaten egg whites. Transfer mixture to buttered or nonstick casserole or baking pan.
  4. Bake in oven for about 40 minutes, or until puffy and golden brown.
  5. Remove from oven and sprinkle top with shredded coconut.
  6. Serve immediately right from the casserole or baking pan.
