Banana Praline Muffins

Ingredients:

  • 1 egg
  • 1/2 cup sugar
  • 1/4 cup oil
  • 1 1/4 cups flour
  • 1/4 tsp salt
  • 3 tbsp brown sugar
  • 1 tbsp sour cream

Directions:

  1. Preheat oven to 400°F
  2. Mash bananas, add egg, sugar and oil. Beat well. Add flour, baking powder and salt and mix until just moistened.
  3. Grease muffin tins, and put equal amount of batter in each.
  4. *Praline:
  5. Mix brown sugar and sour cream, add pecans.
  6. Top each with equal amount of praline mix in center of muffin.
  7. Bake for 15 minutes or until golden brown.
  8. Makes 12 Regular size muffins or 6 large.
