Ingredients:

  • 1/3 cup packed brown sugar
  • 1/4 cup honey
  • 1 large egg
  • 1 1/4 cups multigrain hot cereal (quaker recommended) or 1 1/4 cups quick-cooking oats ( quaker recommended)
  • 1/2 tsp salt
  • cooking spray

Directions:

  1. Preheat oven to 350.
  2. Beat the first 6 ingredients at medium speed of a mixer until blended. Lightly spoon the flour into a dry measuring cup, and level with a knife. Gradually add the flour, cereal, pecans, and salt to the banana mixture, stirring until well-blended.
  3. Spoon mixture into an 8-inch square baking pan coated with cooking spray. Bake at 350 for 25 minutes. Cool completely on a wire rack.
