Ingredients:

  • 1/4 cup applesauce
  • 3/4 cup sugar
  • 1 1/2 cups bananas, mashed
  • 2 large eggs
  • 1/3 cup low-fat plain yogurt or 1/3 cup buttermilk
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 1/3 cup nuts, chopped

Directions:

  1. Preheat the oven to 350, grease a bread pan. Beat applesauce and sugar well, add bananas, eggs, yogurt and vanilla. Beat until well blended. Don't worry about banana lumps. Add the flour, baking soda and salt, stir by hand until just combined. Add the nuts (or chocolate chips or blueberries) and blend gently. Pour batter into pan bake 60 to 70 minutes until the top is springy to the touch. Cool in the pan on a wire rack.
