Directions:

  1. Heat oven to 325 degrees.
  2. Grease a loaf pan, either 9x5x2 or 8 1/2x4 1/2x 2 1/2 inches, with shortening, using a pastry brush (or spray).
  3. Mix sugar, bananas, oil, and eggs in a large bowl with a wooden spoon. Stir in remaining ingredients . Pour into pan.
  4. Bake until wooden pick inserted in center of bread comes out clean, 60 to 70 minutes. Let cool 10 minutes, then loosen slices from loaf pan and remove from pan. Let cool completely before slicing. Makes 1 loaf.
