Ingredients:

  • 2 tsp vanilla
  • 1 cup applesauce
  • 1/2 tsp salt
  • 1/4 tsp baking powder
  • 2 cups sugar
  • 4 tbsp butter
  • 1 egg
  • 2 cups flour

Directions:

  1. Preheat oven to 350.
  2. Spray loaf pan (8-1/2 X 4-1/2 X 2-1/2 or 9 X 5 X 3) with nonstick cooking spray.
  3. Beat sugar and butter on medium until light and fluffy.
  4. Beat in egg, egg whites, bananas and water at low speed until well blended.
  5. Stir in remaining ingredients.
  6. Pour into loaf pan.
  7. Bake until toothpick inserted in center comes out clean, about 50-60 minutes.
  8. Cool 5 minutes, remove from pan.
