Cinnamon Butter Cookies

Ingredients:

  • 2 1/2 cups flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup sugar
  • 2 large eggs
  • 1 tsp vanilla
  • 3 tbsp sugar
  • 1 tbsp cinnamon

Directions:

  1. Preheat oven to 300°F.
  2. In a medium bowl, combine flour, soda and salt; set aside.
  3. In a large bowl, blend sugars with a mixer. Add butter and mix.
  4. Add eggs and vanilla. Mix until light and fluffy.
  5. Add flour mixture and blend just until combined. Do not overmix.
  6. Shape dough into 1-inch balls.
  7. Roll in combination of remaining sugar and cinnamon.
  8. Place 2-inches apart on ungreased cookie sheets.
  9. Bake for 18-20 minutes.
  10. Remove immediately from pan and cool.
