Baked Spinach Stuffed Tomatoes

Ingredients:

Directions:

  1. Slice tops off of tomatoes and scoop out insides
  2. Salt shells lightly, and turn upside down on paper towel
  3. Saute spinach in skillet, drain if needed (I use bagged frozen spinach instead of the box. Much less water, the liquid usually cooks off)
  4. Return to skillet
  5. Add other ingredients
  6. Cook until well mixed and heated through
  7. Spoon mixture into tomato shells
  8. Top with remaining shredded cheese and sprinkle with parmesan
  9. Bake at 350 about 30 minutes, until bubbly
