Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. Peel and slice the pumpkin (removing any seeds and stringy flesh), and the onion.
  3. Layer the pumpkin and onion in a small, rectangular baking dish, and sprinkle with salt and pepper.
  4. Repeat the layer, and season.
  5. Cover with a layer of brown sugar.
  6. Pour melted butter over the top (I think you could use 1/2 to 3/4 stick of butter, to cut back).
  7. Bake, uncovered, for 30 minutes, or longer, until tender and carmelized.
