Baked Penne with Asparagus & Turkey Meat Sauce

Directions:

  1. Preheat oven to 350 Degrees. Bring large pot of water to boil and cook penne pasta according to package directions. When pasta is 1 minute from being done, add asparagus and boil for 1 minute, drain and return to pot.
  2. Meanwhile, coat a large skillet with cooking spray and brown ground turkey with minced garlic, until lightly browned, about 7 minutes. Add tomato sauce, basil, salt, pepper and simmer until heated through. Add turkey to meat sauce to penne and asparagus and gently coat.
  3. Lightly coat a 3 qt. baking dish with cooking spray. Add 1/2 of penne mixture to the dish and sprinkle with 2/3 of the cheese. Add remaining penne, then sprinkle with remaining cheese and top with grated Parmigiano-Reggiano cheese. Bake for 18-20 minutes, until cheese is melted. Let it rest for 5- 10 minutes before serving.
