Baked Orange Roughy With Tomatoes and Herbs

Ingredients:

Directions:

  1. Preheat oven to 350°F.
  2. Spray an ovenproof skillet with nonstick pan spray.
  3. Melt butter in skillet.
  4. Sauté the onion and garlic in the skillet over medium heat until soft, about 5 minutes.
  5. Stir in tomato and seasonings.
  6. Cover and simmer for 5 minutes.
  7. Add the fish to the skillet.
  8. Cover with the sauce.
  9. Pour wine over the fish.
  10. Cover and bake for 15 to 20 minutes, or until the fish flakes with a fork.
  11. Remove the fish to a heated platter.
  12. Simmer the sauce in the skillet.
  13. Reduce to 2/3 cup.
  14. Stir in tomato paste.
  15. Reheat and pour over the fish.
