Baked Mediterranean Eggs With Arugula And Yoghurt

Ingredients:

Directions:

  1. Preheat the oven to 300 F .
  2. Rinse the arugula and place in an oven-proof frying pan with the oil ,water ,and a little salt
  3. Cook over medium heat for 5 minutes or so until most of the liquid has evaporated
  4. Make 4 indentations in the arugula and crack in the eggs
  5. Bake in the oven for 10 to 15 minutes until the egg whites set.
  6. Meanwhile combine the yoghurt with the garlic and salt to taste and leave at room temperature
  7. Melt the butter in a small pan and add the chilli flakes and paprika and cook until the butter foams
  8. Add the sage and cook a few seconds longer ,and remove from heat
  9. To serve,spoon the egg and arugula on to thick , toasted and buttered sourdough bread .
  10. Pour the hot chilli butter over the yoghurt and eggs .
  11. Maybe a side serve of best bacon or some smoked salmon.
