Baked Mediterranean Eggs With Arugula And Yoghurt

Eggs are oven baked with spices and served with yoghurt as a special brunch for someone special or with good friends on a lazy day -champagne anyone ??
Ingredients:
8 ozs wild arugula --or substitute spinach but its not peppery like arugula .
1/2 cup water
2 tbsp olive oil
4 organic or free-ranged eggs
5 ozs greek-style or natural yoghurt
1 fat garlic clove ,crushed
2 tbsp unsalted butter
1/2 tsp chilli flakes
1/2 tsp sweet paprika
6 sage leaves
sea salt
Directions:
1. Preheat the oven to 300 F .
2. Rinse the arugula and place in an oven-proof frying pan with the oil ,water ,and a little salt
3. Cook over medium heat for 5 minutes or so until most of the liquid has evaporated
4. Make 4 indentations in the arugula and crack in the eggs
5. Bake in the oven for 10 to 15 minutes until the egg whites set.
6. Meanwhile combine the yoghurt with the garlic and salt to taste and leave at room temperature
7. Melt the butter in a small pan and add the chilli flakes and paprika and cook until the butter foams
8. Add the sage and cook a few seconds longer ,and remove from heat
9. To serve,spoon the egg and arugula on to thick , toasted and buttered sourdough bread .
10. Pour the hot chilli butter over the yoghurt and eggs .
11. Maybe a side serve of best bacon or some smoked salmon.
