Bacon Cheddar Spoonbread

Ingredients:

  • 3 cups milk
  • 1-1/4 cup cornmeal
  • 3 tsp. butter
  • 1 tsp. salt
  • 2 eggs
  • 1/4 cup chopped bacon

Directions:

  1. Bring milk to a boil.
  2. Add cornmeal and stir for 1 minute then take off heat.
  3. Stir in butter, salt, baking powder, cheddar and bacon.
  4. Stir in 2 eggs that have been lightly beaten.
  5. Pour mixture into preheated baking dish or preheated cast iron skillet.
  6. Bake at 350 for 20- 30 minutes or till tooth pick comes out clean. Serve w/ dollop of softened butter.
