Ingredients:

Directions:

  1. Heat pan and add olive oil.
  2. Sauté onion until slightly tender;
  3. Add garlic, salt, and pepper, and sauté for a few more minutes;
  4. Add chicken stock, chicken, and thyme;
  5. Bring to a simmer and cook for 20 minutes;
  6. Add carrots, celery, and parsnips and cook for 20 minutes;
  7. Remove thyme stems, pull leaves from stems and add back to soup
  8. Add noodles and cook another 15 minutes, until noodles are tender.
