Avocado and Tomato Bread Salad

Ingredients:

Directions:

  1. Heat 1 tablespoon of extra virgin olive oil in a frying pan until hot. Add the avocado and gently saute for 2-3 minutes. The avocado and the oil should take on a bright green color. Using a slotted spoon remove the avocado to a bowl and set aside. Drain the oil into another bowl and set aside.
  2. Using the same frying pan, heat the 1 1/2 teaspoons of extra virgin olive oil. Add the bread cubes and toss to distribute the oil on the bread. Cook over medium heat turning cubes frequently until the cubes are golden brown. Remove from pan and set aside to cool.
  3. Put the tomatoes in a large bowl and gently toss with the salt an pepper.
  4. To the olive oil set aside, whisk in the lime juice until well combined.
  5. Drizzle the lime/olive oil dressing over the tomatoes while gently stirring. Add the avocado and stir gently again. Gently fold in the bread cubes. Let stand for 5-10 minutes before serving.
  6. Best served fresh, but may be made ahead and kept in the fridge for a few hours before serving.
