Asparagus Onion Casserole II

Ingredients:

Directions:

  1. Set oven to 350 degrees.
  2. Grease a 1-1/2-quart baking dish.
  3. In a skillet, saute the fresh asparagus and onions in 1 Tbsp butter until crisp-tender (about 8 minutes, less time for frozen).
  4. Transfer to a prepared baking dish.
  5. In a saucepan melt 2 Tbsp butter.
  6. Whisk in the flour until smooth; gradually add in the half and half cream OR milk, bring to a boil; cook and stir for 2 minutes, or until thickened.
  7. Reduce the heat.
  8. Add in the cream cheese, 1 Tbsp grated Parmesan cheese (if using) salt and pepper; stir until the cheese is melted.
  9. Pour over the veggies in the baking dish.
  10. Sprinkle with cheddar cheese.
  11. Melt 2 Tbsp butter; toss with the Parmesan cheese (if using) and the bread crumbs.
  12. Sprinkle the bread crumb mixture evenly over the top of the casserole.
  13. Bake, uncovered for 35-40 minutes, or until heated through.
