Directions:

  1. Remove skin and pith from grapefruits. Save the juice in a bowl while keeping the segments until ready to serve.
  2. Mix the juice with the oil and salt.
  3. Add avocado and onion to the dressing.
  4. To serve, place the arugula in a very large bowl, then add the avocado and onion dressed on top.
  5. Stir gently.
