Ingredients:

Directions:

  1. Wash tomatoes onions, jalapeno, limes, cilantro
  2. Chop tomatoes, onions and add to bowl, cilantro.
  3. Mince garlic, add to bowl.
  4. Add olives and green chilis to the bowl, do not drain the juices.
  5. Use gloves to handle the jalapeno, chop and add to bowl.
  6. Grind coriander seeds and add to bowl.
  7. Add olive oil and salt to taste
  8. Add juice of the limes
  9. Mix all ingredients and let set overnight.
  10. Be very careful with the Jalapeno. I have found them to be quite mild when they are uncooked, but occasionally they can be very hot. Add only enough to suit your palate.
