Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. Combine in a large bowl, preserves and mustard.
  3. (for less spicier recipe use less mustard and for spicier, use more mustard.) Cut chicken breasts into 2 inch wide strips and put in apricot mixture.
  4. Generously coat the chicken.
  5. Place chicken into baking dish.
  6. Cover with remaining sauce.
  7. Cook for about 45 minutes.
  8. Garnish with fresh apricots if desired.
