Apricot and Banana Crumble

Ingredients:

  • 6 1/2 oz dried apricots
  • 1 1/2 cups plain flour
  • 3 oz butter
  • 1/3 cup sugar

Directions:

  1. Soak the apricots in water to cover for 2 hours. Drain and chop them.
  2. Put the apricots and bananas in a baking dish and sprinkle with the coriander.
  3. Sift the flour into a bowl and rub in the butter until the mixture resembles breadcrumbs. Stir in the sugar.
  4. Sprinkle this crumble topping over the fruit. Cook in a preheated moderately hot oven, 200C (400F) for 45 minutes or until the topping is golden brown. Serve with cream.
