Ingredients:

  • 1/4 cup honey
  • 1/4 cup brown sugar
  • 3/4 cup sugar
  • 1 cup applesauce
  • 1/2 cup buttermilk
  • 1 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 2 1/4 cups flour

Directions:

  1. Combine honey and brown sugar in a frying pan. cook over medium heat until it dissolves, 2 to 3 minute stir often and add apples (cored, thinly sliced) to the pan. cook for about 4 min until apples soften. remove from heat.
  2. Wrap the bottom and outer sides of a 9 inch spring form pan with foil. lightly spray inside surface. transfer the apple mixture to the pan and arrange the slices into an even layer. put the sugar and corn syrup into a large bowl and beat with an electric mixer. add the egg white and beat until smooth, beat in applesauce and buttermilk at high speed for 1 min more. the mixture should have a slight froth.
  3. Combine the remaining ingredients then add to the batter in a large bowl and mix until smooth. spread evenly over apples. bake at 350 degrees for 40 to 45 minute.
