  1. Beat egg yolks until thick and lemon colored. Add milk and brandy, beating well. Beat egg whites (at room temperature) until stiff peaks form; gently fold into flour.
  2. Dip apple slices in batter. Fry in hot butter until golden brown and tender, turning once. Sprinkle with powdered sugar.
