Ingredients:

  • 1 cup of applesauce
  • 1 package of dry yeast
  • 1/4 cup of warm water
  • 1/2 cup of scalded milk
  • 1 tbsp of sugar
  • 1 tbsp of shortening
  • 1 tsp of salt
  • 4 cups of sifted flour
  • 1/2 cup of chopped pecans

Directions:

  1. Combine applesauce and mincemeat.
  2. Combine yeast and warm water; let stand about five minutes.
  3. Combine scalded milk, sugar, shortening (no trans fat kind) and salt. Stir until the shortening is melted and then let it cool to lukewarm. Stir the yeast into the milk. Stir this into the applesauce/mincemeat mixture. Gradually add in the flour and beat it until mixed. Keep mixing until smooth and elastic. Mix in the nuts. Let rise for about an hour or so til doubled. Punch down and divide into two greased loaf pans. Let rise again. Bake at 350 degrees for 40 minutes. Turn out on a wire rack to cool. Serve hot with butter.
