Apple and Sweet Potato Casserole

Ingredients:

  • 4 cups (2 large yams) peeled, halved, and cut into 1/2 inch thick slices
  • 2 apples, peeled, cored , and cut into thin slices
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg

Directions:

  1. Wash and slice sweet potatoes into bite size pieces.
  2. Boil the sweet potato slices until just barely tender. Meanwhile, in a non-stick skillet, cook the turkey sausage until well browned and crumbled.
  3. Wash and slice apples.
  4. Cook and scramble egg whites until almost done.
  5. Mix together the cooked sweet potatoes, apples, cooked sausage, egg whites, cinnamon, and nutmeg.
  6. Spray glass baking dish with cooking spray.
  7. Transfer to a glass baking dish (9 x 13), cover and cook in a 350 F oven until the apples are tender (about 45 minutes).
  8. Serve hot.
