Directions:

  1. Heat oven to 350 degrees.
  2. In a large bowl, mash the potatoes with the skin on with the butter. Add all of the other ingredients. Spray individual ramekins or a large casserole dish with cooking spray. Transfer potato mixture to ramekins or casserole. If desired, sprinkle top with grated cheddar.
  3. Bake about 20 minutes (or longer if using a large casserole dish) until thoroughly heated and lightly browned.
