Amish Oatmeal Whoopie Pies

Ingredients:

  • 2 cups brown sugar
  • 3/4 cup margarine
  • 2 eggs
  • 1/2 tsp salt
  • 2 cups flour
  • 2 cups oatmeal
  • 1 tsp cinnamon
  • for filling
  • 2 tbsp milk
  • 2 tsp vanilla
  • 1 1/2 cup shortening
  • 4 tbsp four

Directions:

  1. Cream together sugar, margarine, and eggs. Add salt, flour, oatmeal, cinnamon and baking powder. Add soda and water last. Beat well.
  2. Bake at 350 degrees for 10 minutes.
  3. For filling:
  4. Beat egg whites until stiff. Add vanilla, flour and milk. Beat well and add shortening and sugar.
  5. Place cream filling between two cookies.
  6. Enjoy!!!
