After Thanksgiving Omelet

Ingredients:

  • 4 eggs
  • 2 tbsp butter
  • 1 tsp salt
  • 1/2 tsp white pepper

Directions:

  1. Beat eggs.
  2. Pour eggs into mashed potatoes while beating the potatoes.
  3. Add the parsley, salt and pepper, and mix.
  4. Melt butter in an omelet pan.
  5. Put potatoes in the pan and smooth out with the spatula.
  6. Cook until browned, and fold as an omelet.
