Zucchini Pie Casserole

Ingredients:

  • 3 cups thin sliced zucchini
  • 1 cup bisquick
  • 1/2 cup chopped onion
  • 1/2 cup parmesan cheese , grated dry type will do
  • 1 tsp salt , to taste
  • 1/2 tsp. black pepper
  • 1/2 cup oil
  • 1 to 3 tsp. fresh parsley to taste

Directions:

  1. Mix all ingredients.
  2. Place in an oiled casserole dish or pie pan.
  3. Bake 30 minute at 350 deg.
  4. Serve hot or cold.
  5. You may choose to add extra grated cheese.
