Zucchini Nut Bread by Sheila

Ingredients:

  • 3 eggs
  • 1 cup oil
  • 2 1/2 cups sugar
  • 3 tsp vanilla
  • 3 cups flour
  • 1 tsp salt
  • 3 tsp cinnamon
  • 1/2 cup chopped nuts

Directions:

  1. Beat eggs.
  2. Add oil, sugar, zucchini, and vanilla.
  3. Mix lightly but well.
  4. Add other ingredients.
  5. Beat well.
  6. Bake in greased loaf pans at 325 for 1 hour.
  7. Yields 2 loaves.
  8. Freezes well.
