Ingredients:

  • 6 cups zucchini
  • 1 tbsp olive oil
  • 2 cups egg beaters

Directions:

  1. Dice zucchini
  2. Coat casserole dish with olive oil
  3. Mix zucchini, cheese and egg beaters in dish
  4. Bake at 350 for 45 minutes.
