Ingredients:

  • 1-1/2 cups granulated sugar
  • 2/3 cup applesauce
  • 3 cups flour
  • 1/4 tsp salt
  • 1/3 cup cocoa sifted
  • 3 tsp vanilla

Directions:

  1. Preheat oven at 350 then prepare rectangular baking pan with cooking spray and lightly flour.
  2. In mixing bowl combine zucchini, sugar, applesauce, vanilla and coconut extract.
  3. In another mixing bowl combine flour, salt, baking powder, baking soda and cocoa.
  4. Mix wet ingredients with dry ingredients just until moistened.
  5. Spread batter in prepared pan and bake 25 minutes.
