Ingredients:

  • 3 eggs slighlty beaten
  • 1 tbsp vanilla beat 1st 5 ingredients until thick and lemon colored, then stir i
  • 3 cup flour sifted with
  • 1 tbsp cinnamon
  • 1 tsp salt
  • 1/4 tsp baking powder
  • 1 cup chopped walnuts (optional)
  • 1 cup raisins folded into the batter

Directions:

  1. Beat eggs, brown sugar, white sugar, vegetable oil and vanilla till lemon colored and thick.
  2. Stir in: zucchini
  3. Add: sifted flour, cinnamon, baking soda, salt and baking powder and mix well by hand
  4. Fold in
  5. Walnuts and Raisins
  6. Bake in Greased loaf pans for 1 hour 350 degrees.
  7. Cool in pans 10 minutes
