Ingredients:

  • 3 large eggs
  • 2 cups sugar
  • 1 cup oil
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1 tsp vanilla
  • 3 cups flour

Directions:

  1. Mix all above ingredients and beat well at low speed on mixer. Then beat 1 minute on medium speed.
  2. Stir in flour and zucchini .
  3. Put in 2 greased and floured loaf pansor in 1 greased and floured tube pan.
  4. Cook about 30 - 45 minutes.
