Ingredients:

  • 3 eggs
  • 2 cups sugar
  • 3 cups flour
  • 1 tsp salt
  • 1/4 tsp baking powder
  • 3 tsp cinnamon
  • 1 tsp vanilla
  • 1 cup nuts (optional)

Directions:

  1. Blend well in mixer, eggs, sugar and oil.
  2. Into mixture add all dry ingredients mixed with 2 c flour.
  3. After mixture is blended add last cup of flour, folding in by hand.
  4. Fold in 2 c zucchini, drained partially. Add vanilla.
  5. Bake in 2 bread tins 350 degrees for 60 minutes.
