Ingredients:

  • 2 cups sugar
  • 1 cup oil
  • 3 1/2 cups flour
  • 3/4 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 1/2 tsp salt
  • 3 tsp vanilla
  • 2 tsp cinnamon
  • 1 cup raisins (optional)
  • 1 cup nuts (optional)

Directions:

  1. Grease and flour 2 loaf pans.
  2. Mix eggs, sugar and oil together. Add grated zucchini and vanilla to egg mixture. Sift dry ingredients and add to wet ingredients.
  3. Add raisins and nuts. Mix well.
  4. Bake at 350 degrees for 1 hour or until toothpick inserted in center comes out clean.
