Ingredients:

  • 3 eggs
  • 1 cup corn oil
  • 2 cups sugar
  • 3 tsp vanilla
  • 3 cups flour
  • 2 tsp cinnamon
  • 1/4 tsp baking powder
  • 1 tsp salt

Directions:

  1. Beat eggs until light and foamy.
  2. Add oil, sugar, grated zucchini and vanilla.
  3. Mix lightly but well, then add the flour, salt, soda, cinnamon, and baking powder.
  4. Mix till blended well.
  5. Divide batter into 2 well greased and floured 9x5-inch loaf pans.
  6. Bake at 325 degrees for 1 hour or until done.
  7. Raisins or nuts may be added.
