Directions:

  1. Cook 1st 5 ingred (juice only of limes). In a separate pan, cook carrots in boiling/salted water (2-3 mins)...drain. Put into serving bowl. Add apricots & scallions. Pour lime mixture over top and gently toss. Top with lime zest and serve.
