Ingredients:

  • 2 tsp margarine
  • 1 large onion
  • 2 eggs
  • 1 1/2 cups 1% milk
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1/8 tsp nutmeg
  • 1/2 cup broccoli
  • 1/2 cup mushrooms

Directions:

  1. Preheat oven to 375F
  2. Melt the butter in a large nonstick skillet over medium. Add onion & cook until golden. Add broccoli and mushrooms, cook until tender.
  3. Whisk the eggs, egg whites, milk, salt, pepper, nutmeg & 1/4 cup of the cheese in a medium bowl until blended
  4. Spoon the onion into the bottom of a baked pie shell (WW Basic Pie Crust). Pour the egg mixture on top and sprinkle with the remaining 1/4 cup cheese.
  5. Bake until the top is golden and a knife inserted into the centre comes out clean, approx. 35 minutes
