Ingredients:

Directions:

  1. Prepare oatmeal with 1 cup water according to package directions.
  2. In a small bowl, mix together the egg (egg beaters may be substituted), the 3/4 cup water and the nonfat dry milk.
  3. In a second bowl, mix together the whole-wheat flour, baking powder, salt (optional), and cinnamon. Add these mixed dry ingredients to the egg and milk mixture. Blend well. Then add in the cooked oatmeal.
  4. Prepare griddle or large skillet. Pour batter by 1/4 cupfuls. Cook about 3 minutes, then turn and cook pancakes about 2 minutes more.
  5. Recipe makes about 12 three-inch pancakes. Serve pancakes with blueberries, plain yogurt, and syrup.....or any combination of these three. Other fruits may be substituted for the blueberries. Raspberries are excellent.
  6. One serving equals 1 pancake. Calories are low enough for one pancake that you could easily have more than one.
