White Or Chocolate Eggnog Fudge

Ingredients:

  • eggnog fudge
  • 1/2 cup sugar
  • 3 cups miniature marshmallows
  • 2/3 cup purchased eggnog
  • 3 tbsp butter
  • 1 tbsp corn syrup
  • 1/8 tsp salt

Directions:

  1. Butter sides of a heavy 3-quart saucepan. Add sugar,
  2. Marshmallows, eggnog, butter, corn syrup, and salt to
  3. The saucepan; cook over low heat, stirring constantly,
  4. Until sugar is dissolved. Turn heat up to medium and
  5. Cook until mixture boils.
  6. Continue to cook, stirring constantly, to about 232° .
  7. Add chocolate chips and continue to cook for 5 minutes
  8. (should be at soft ball stage*), or until chocolate is
  9. Melted. Stir in chopped nuts. Pour into a buttered
  10. 8-inch square pan. Cool to room temperature, then
  11. Chill and cut into squares.
  12. Makes about 3 dozen pieces of eggnog fudge.
  13. *To Test for Soft Ball Stage
  14. A small amount of syrup dropped into chilled water
  15. Forms a ball, but flattens when picked up with fingers
  16. (234° to 240°).
