Ingredients:

  • 1 1/2 cups flour
  • 1 pinch salt
  • 1/8 tsp cinnamon
  • 2/3 cup sugar
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup watermelon , pulp
  • 1/2 cup raisins

Directions:

  1. Preheat oven to 350 degrees.
  2. Sift flour, baking powder, baking soda, salt and cinnamon in large bowl.
  3. Cream butter and sugar; add eggs.
  4. Whip in milk, juice, pulp and raisins.
  5. Add wet mixture to dry ingredients; blend until just mixed.
  6. Fill greased muffin cups 2/3 full.
  7. Bake 25 minutes or until tester comes out clean.
  8. Transfer to wire racks; cool.
