Ingredients:

  • 200 g potato
  • 1 clove garlic
  • 100 g watercress
  • 500 ml stock

Directions:

  1. Chop the onion and gently sweat in a few sprays of Fry Lite. Grate a little nutmeg into the mix.
  2. Chop the garlic and potato and add to the pan. Cook gently for a couple of minutes.
  3. Add the stock and simmer until the vegetables are tender.
  4. Remove any large stems from the watercress and roughly chop before stirring into the soup. The heat of the soup should wilt the watercress.
  5. Allow to cool slightly before blending the mixture smooth before returning to the pan to be warmed through and seasoned with salt and pepper.
