Warm Rocket Salad

Ingredients:

  • 2 tbsps olive oil
  • 25 g thyme
  • 25 g pinenuts
  • 25 g parmesan

Directions:

  1. Peel, halve & 1/4 onion, 1/4 again
  2. Heat a frying pan & fry off 8 whole rashers pancetta unitl crisp
  3. Add 4 sprigs of thyme, onion, good handful of pinenuts
  4. With a pinch salt
  5. Toss around, fry medium heat 5mins until caramelised
  6. & sweet
  7. Put pancetta back inot pan toss around
  8. Throw everything into salad bowl
  9. 4 big handfuls of rocket and salad leaves
  10. Drizzle generously with balsamic vinegar
  11. Grate parmesan over the top
