Walnut Cherry Eggnog Muffins

Ingredients:

  • 2-1/2 cups all purpose flour
  • 1/2 cup plus 3 tbsp granulated sugar
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 heaping cup coarsely chopped walnuts
  • 1 cup eggnog
  • 1 egg
  • 1/4 cup melted butter
  • 2 tsp vanilla
  • 1 heaping cup dried cherries

Directions:

  1. Mix together flour, sugar, baking powder, nutmeg, salt and walnuts.
  2. Mix eggnog, egg, butter, vanilla, rum flavoring and cherries until well combined.
  3. Combine wet and dry ingredients stirring as few strokes as possible.
  4. Grease muffin tins liberally with softened butter then fill 2/3 full and bake 20 minutes at 375.
