Ingredients:

  • 1 1/2 lbs ground beef
  • 1/3 cup onion, minced
  • 1 egg
  • 1 1/2 tsp salt
  • 1/4 tsp ginger
  • 1/4 cup milk
  • 2 tbsp cornstarch
  • 1/2 cup brown sugar , packed
  • 1 (13 1/2 oz) can pineapple tidbits , drained-reserve syrup
  • 1/3 cup vinegar
  • 1 tbsp soy sauce
  • 1/2 tsp garlic powder

Directions:

  1. Mix thoroughly the beef, cracker crumbs, onion, egg, salt, ginger, & milk and garlic powder. Shape mixture by rounded tablespoonfuls into balls.
  2. Melt butter in skillet (or spray cooking spray onto skillet) brown and cook meatballs, remove meatballs; keep warm.
  3. Drain the fat from the skillet. Mix cornstarch and sugar. Stir in reserved pineapple syrup, vinegar and soy sauce - mixing until smooth.
  4. Pour the liquid into the skillet andcook over medium heat, stirring constantly, until the mixture thickens and boils. Boil and stir 1 minute. Add meatballs, pineapple and green pepper into skillet.
