Vegan Low-Fat Low-Sugar Pumpkin Pie

Ingredients:

  • 1 (12 1/3 oz) box firm silken tofu
  • 1 tbsp canola oil
  • 2 1/3 cups cooked pumpkin
  • 3 tbsp maple syrup
  • 3/4 tsp stevia
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg
  • 1/8 tsp clove
  • 1/8 tsp allspice
  • 1/8 tsp salt
  • 1 1/4 cups brown rice flour
  • 3 tbsp cold water

Directions:

  1. Mix last 5 ingredients to form crust, roll or press into pie pan and bake at 350 for 5 minutes.
  2. Combine all remaining ingredients in blender or food processor until smooth, pour into prepared crust.
  3. Bake for 45 minutes to 1 hour at 350, until knife comes out clean.
