Vegan Chocolate Pumpkin Cookies

Ingredients:

  • 6 tbsp sugar
  • 1 tbsp corn oil
  • 1/2 tbsp flax seed meal
  • 1 1/2 tbsp water
  • 1 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp sea salt
  • 1/4 cup semisweet vegan chocolate chips

Directions:

  1. Boil water, add to flax meal, stir and let stand for 10 minutes.
  2. Mix sugar, pumpkin, oil, vanilla, and flax meal mix.
  3. Add flour, baking powder, baking soda, cinnamon and salt. Stir to mix well.
  4. Add chocolate chips and stir.
  5. Bake at 375 for 10-12 minutes.
