Uncle Bill's Fresh Beet Filling for Pyrahi

Ingredients:

  • 3 large red beets
  • 1/2 tsp salt
  • 3 tbsp butter

Directions:

  1. Wash and scrub beets, cut off the tails and the end.
  2. In a saucepan, add beets, just cover with water and bring to boil.
  3. Reduce heat and cook until beets are just tender, about 30 minutes.
  4. Drain and immediately pour cold water over beets.
  5. When cool enough to handle, remove skins and discard.
  6. Grate beets.
  7. In a mixing bowl, add grated beets, sugar and salt, mix well.
  8. In a frying pan, melt butter, add beet mixture and saute' for 5 minutes stirring occasionally.
  9. Let cool slightly before using.
  10. Use about 3 tablespoons of filling for each pyrahi.
  11. You can also use canned regular beets.
  12. Grate the beets and prepare them as above.
