Ulu ( Breadfruit) Chowder

Ingredients:

Directions:

  1. Cook breadfruit in water.
  2. When fork tender, remove from water and reserve 2 cups of boiling liquid.
  3. Cool, peel and core breadfruit; cut into 1/2-inch dices (you should have about 2 cups).
  4. Cut bacon into small pieces and fry until light brown.
  5. Add onions, celery and carrots.
  6. Cook until tender.
  7. Add 2 cups of the reserved breadfruit boiling water and 1 1/2 teaspoons salt. Simmer until vegetables are soft and flavors have blended.
  8. Add milk and corn.
  9. Heat thoroughly.
  10. Season with salt and pepper to taste. Garnish with chopped parsley, if desired.
